One of these tips revolves around mixing, with the Youtube channel benjaminthebaker doing an excellent job of explaining:

In the video, he shows a macaron that is under-mixed, over-mixed, and one that is perfect. When the batter falls off in one clump, it’s under-mixed and will be rough and bumpy. If the batter falls off the spatula and reabsorbs into the rest of the mixture, it’s over-mixed and will be flat. The perfect mixture will slowly fall off the spatula like ribbons and be slow to reabsorb into the rest of the batter. That’s how you get the perfectly light, fluffy macarons that we all know and love!

This video is excellent because it explains the subject of mixing in a very easy to understand way. It’s a great starting point for anyone who wants to get into making macarons for themself!

[21
27,45,40,44
post-106","post","type-post","status-publish","format-standard","has-post-thumbnail","hentry","category-fun-facts","tag-macarons","tag-mixing","tag-tips","tag-videos
["GET
